Mix salt, pepper, garlic powder, and oregano in a separate cup.
Wash peeled potatoes and cut them into quarters. Place them into the tall ove dish (so they have to be in multiple layers) and Oil lightly. Coat evenly with the spice mix. Add 2-3 tablespoons of water into the dish. Cover tightly with aluminium foil.
Place into the oven at 400 °F (205 °C) for 1½ hour.
Remove the aluminium foil and add butter on top of the potatoes. Leave in the oven for additional 15 minutes.
Remove potatoes from oven and add sour cream. Mash them until blended. Serve in a dish.
